What is the code that it sets?

Did you completely remove the cats or are they still there, just "high flow"?

I suppose start with easy stuff first. If it throws the code immediately upon entering closed loop and has lost fuel mileage I would GUESS that its maxing out the fuel trims on one bank and overfueling as a result. If you believe the mechanical issues have been fixed and you want to reset the O2 codes (trims specifically), there is a special procedure to do it and you cant just clear them out on a scan tool by pressing a button.

I cant remember exactly,

Warm up to operating temp
Key off
Unplug MAF
Key on
Read codes (should be a maf code poresent + the O2 sensor code)
Plug MAF back in
clear codes
Key off
Start vehicle
Let run for 5 mins.

Hmm not sure. It is accurate though that P1273/1283 will not reset unless you do the unplug the maf reset procedure- even if you fix the mechanical issue it will keep popping up unless you do the procedure. So you have to do it after each thing you repair.
