So I read that our truck takes 5 3/8 quarts of oil. I got my oil changed at a local service center yesterday and gave them a 5 quart and a 1 quart bottle. I told him to put 5 and 1/4 quarts in and I would add some if necessary at home. I recently moved and do not have the tools and equipment necessary to change my own oil at the new house. Come to find out he put all 6 quarts in because I checked this morning and the oil level is at the top bend above the high mark when cold. Should I take it to the shop again and have them drain the excess? I don't even want to go back to that shop after this but if it's going to harm the motor that badly from being a half quart over I'll get it taken care of.

I would not drive it

This is not something to mess around with. That much excess oil MAY blow your rear main seal which is a very expensive repair.

Call the shop and demand that they send a tow truck or a mechanic with the tools and a drain pan to correct this issue. Driving it to the shop is NOT a good idea.

Do you have a pair of pliers? If so grab an old pot or carton, loosen drain bolt until about a 1/2 quart comes out and tighten. Check the level and repeat as necessary.

I've re-used them and never had leaks. Just don't over tighten.

I don't deal with washers anymore:

Fumoto® USA | Quick and Easy Engine Oil Drain Valves

But I routinely reused the washers when changing oil.
Just ordered one. Along with everything I need to change my oil myself once again. Thank you! I had the truck towed back to the shop on their dime and they are correcting it at no cost. Last time I let anyone near my truck for simple maintenance.

It is easy to do yourself. If you decide to use a shop in the future. Just give them 5 quarts for the oil change. Add extra before you leave the lot. One way to make sure they did not overfill.

I always did my own oil changes while I was in North Carolina. Between moving from NC to nj to pa to nj and 3 more times in nj before buying a house, everything I once had in my garage in NC has been lost in transition. Now that I have a garage at my house I can finally do my own changes again. The apartment I lived in last had signs in the parking lot stating that it was against the law to perform vehicle maintenance there. Probably something about the risk of spills and affecting the environment.
