I searched for a while and didn't find an answer.

With a 2" spacer and a 1 " rear block...what is the largest tire ic an put on a 16" wheel (stock) without trimming, caster, etc.

Firestone told me 275/70.

What about a 285/75?

Your oem rim is only 7" in width. The max size tire for that rim is going to be a a 265. The 275 will fit but will be hard to find and then a 285 will fit but is not recommended.

I've got 285/75s on my stock rims without a problem. I'm not sure if it will fit with that spacer setup, but it fits just fine on the rim.

I Have Spacers 2 In Front And 1 In The Back And I Run 285/75 And Its Fine Just Had To Remove The Mud Gards

You'll find that quite a few people here run the 285/70 size (33") even though its not recomended for your wheel size. It seems as though some people need to trim fender wells and some don't. A 265/70 (32") I believe is your other option.
