I have a 2002 King Cab, factory sound was the 4-speaker setup so I have the two tiny ones in the A-pillars and two in the doors.

Will be ordering a new HU and speakers from Crutchfield, but what do I want to do in the back to get some sound back there? Not looking for big base, just more of a surround-sound.

Small sealed sub for filler bass & sound...allowing you to skip rear speakers altogether. I'm not a loud/SPL stereo guy...but until my first sub went in in 2010, I had NO idea what I was missing in all my aftermarket stereo installs since my first in '79.
IIRC, the tweeter location in Gen 1s is what is considered "on-axis" meaning you 'might' want softer toned component tweeters such as silk as opposed to metallic.
