I have a 2000 Frontier XE 4x4 with the stock 265/70-15 tires on 15x7 wheels and I'd like to increase the side-to-side stability of the truck during off-roading. Is there any way to increase the track (width) between tires while keeping my stock wheels?

Thanks!

You are not going to gain much width safely. You could stick some spacers on it like these
on it at the expense of scrub steer which would be the same effect created by greater + Offset wheels. I ran 2" spacers on my truck for nearly 6 months with no ill effect but hearing the tires rub and screech every time I turned. Just keep rotating your tires if you are worried about wear and keep in mind the spacers can become a week point.
