buy a volant and cover up the ram air scoop i heard of people doing that

Get some plexiglass and connect the pieces to make a open box.

Why not just put the stock intake back on when you want to go off roading in the wet stuff?

Take the filter off, connect some pvc that angles up or where ever is more protected, then re-attach your filter to the end... Or use a snorkel...
Take a big piece of tubing and slip it over the filter attaching it to the rear of the filter. then cut out a big chunk that will face your cab. Plug the other end and you will at least have a shield...

AEM and K&N make a dry cover that you can use over your CAI filter. This way it limits the amount of mud/water that enters your intake.

Also, if you use the plastic cardboard material (same material used for the post office totes), you can easily cut that to fit inside the engine bay. I am just not sure how much heat it can resist before it melts or deforms. You could atleast use it as a template to bend up some metal or something along those lines.
