I was on my way home yesterday, going around a corner nice and easy, when I hear a sound like my door locks activating. Whaaat?

I think maybe my knee hit the key fob and activated it. Not really very likely, but I decide to push the button on the key fob.

First off, the locks activate and and yes, that was exactly the sound I heard. But then, the engine dies for a split second and comes back on. Whaat?

I push the button again and it does it again. I'm baffled.

And today I was driving to the store and happened to see the Air Bag light on the dash come on for about a second. The one at the top of the console, not the one in the instrument cluster. The air bag key below the console is in the ON position.

What the hell man?!

It's hard to say, but I've heard a lot of weird things happen on these vehicles due to poor battery cable connections. If it were me, I'd remove the battery cables from the battery and clean the terminals and posts real good, then re-install and made sure they are good and tight (you shouldn't be able to turn them on the post by hand). Then I'd check the charging system voltage just to make sure it's within specs (13.2-15.5 volts). Hopefully after that, the gremlins won't return!

I recently cleaned up the terminals and the body and engine grounds. Also has a fairly new alternator.

I'm thinking rodent gremlins is right. The dirty rats!

Apparently the previous owner had the dash replaced. Maybe something is amiss behind it?

Possibly. There are several grounds behind the dash. It would be nice to have a scan tool to see if there are any stored BCM and restraint system codes. If there were, it might help you narrow it down some using the diagnostic procedure for those codes in the factory service manual.
