Exhaust Advice, 2000 Desert Runner

My exhaust is shot, all clamps are rusted through and heat shields are rattling really badly. Figured this was the time to rip it all out and start over.

2000 Desert Runner, bone stock.

I've learned the truck has two sets of cats. Im assuming that one set would be attached to the manifold with an o2 sensor right afterwards and the second set as part of the exhaust tubing itself?

I've read the term catback exhaust and understand it as removing the exhaust after the first set of cats. Any mechanical issues that have to be cleared? Better to have each manifold with its own pipe or continue to dump them down the same line?
