How big can one go with the truck stock, and it being a SE (ie, 16" Rim) - before fitment or performance (to a certain extent) is an issue?

265/75r16 without having to do some extreme alignment and possible trimming/melting.

Where did it rub and under what conditions? (ie, turning only, or during suspension travel and turning (body roll))

My guess is that by "stock" he meant not lifted.

Just geared mine down a little and put 245/75-16 Toyos on - need a little room for mud in the wheel wells!!

Thats what I assumed also but by some the answers given I am not so sure that everyone assumes the same.
