Will my wheels and tires fit?

My truck is an 07 crew cab le long bed. I am learning, but essentially know nothing except for what I read on here. I have a 2.5 1.5 ready lift. I removed mudflaps and lower part of front fender. I plan on ordering MB tko 16 X 8.5s wrapped in 285/75/16 grabber at2s...how much do you guys think I will have to trim? Do you have any advice? I will trim whatever as long as it is not metal.

You might have to trim the front cab body seam back a bit right behind the tire. That's where you usually get rubbing. I know you said you don't want to trim metal but that's the typical mod. Easily done with some basic trimming shears after removing the fender well, just make sure to get a quick coat of rustoleum or something on the bare edge after. Then you can notch out the fender well plastic or just hit it with a heat gun and re-mold it.
The tires will usually hit when mid- 3/4 through your turn radius so make sure you check it with the wheels turned.
Considering you're going with a +1 tire upgrade you won't need to trim much (depending on the back spacing of the wheel you chose, the farther it sticks out the more you'll need to trim).
Pull the fender well out, turn the tire to where it's closest to the body seam and mark how far you need to go with a sharpie.

do you think a 255 80 17 would fit better? on my stock le wheels?

I haven't tried them personally but i know there are a couple of guys on here that have (I think 05fronty4x had a set in that size range?). And there are lots of guys running that same wheel. If you're curious about sizing, Discount has a tire size calculator that will help you compare height/width sizes etc..
Your stock LE wheels will make sure that you keep the wheels tucked in far enough but no reason you shouldn't put whatever wheels you want on it. You just have to research and decide. Took me almost a year to find the wheel/tire combo I wanted. I've got 7" of lift and I still had to cut a bunch out of my wheel wells due to the giant wheels and tires I wanted and the wheel off set for the lift. No biggie.
In any case, don't be scared of trimming the body seam to get the tire you want to fit. Most of us have done it. I've done it to lots of trucks from tiny edge trimming to full blown fender remodeling. Just mark and measure and then trim a little at a time so you don't make any big mistakes.

my wheels have a +12 offset...i have a feeling that I may be able to get away with no metal trimming...hoping....that offset would give me a good chance right?

Not the off set so much as the back spacing, the distance from the mounting point to the inside edge of the rim as measured from the inside of the wheel laying face down on the ground. the less back spacing, the more it usually sticks out. Not even sure what stock BS is to be honest. It will depend on what wheel you choose (width mostly) as my 9" wide Level 8s have a 5" BS, they stick out of the fender well about an inch by themselves, add a 13" wide tire and that's another 1.75". you can discuss all that with your tire/wheel dealer. Unless you are going to do a bracket lift kit, stick as close to stock width and BS as possible to minimize the need to trim. 265/75/16 fits the stock Pro-4s from the factory so keep in that size range (overall diameter and width) and you won't need to trim anything

Offset and backspace are different ways of measuring the same thing. Offset is just a much more confusing way of doing it.

Stock backspace is 5.5" and the wheels the OP is looking at has about 5" of backspacing so there won't be a huge increase in width. The wheels should be about 1.5" wider, I believe the stock 16s are 16x7 someone correct me if I'm wrong. 285/75/16 should fit with minor trimming. On my truck I am running 285/70/17 with the same amount of lift on a wheel with a +2 offset so it is even wider than the wheels you are looking at.
