Blanking the EGR is a good idea anyway. It will stop soot getting back to inlet therefor into combustion chamber and than to oil. So blanking Your EGR will keep Your oil cleaner. Also there are other things like better boost control and no hotspots in the inlet.
A bigger cooler might be useful if You can control the increased volume.
A bigger flow air filter will let more particles in Your engine on the other side You won't get that significant HP, the only gain is better gas reaction. I would stay with the OE filter that is actually MAHLE or other highly regarded brands like MANN altough I don't know what is available at Your location. I presume You are from Greece that must be quite dusty right?
Removing the catalityc converter is not legal in most countries of course You can risk on Your own. I would rather buy a pro built full exhaust system which can be very expensive but will definately worth the money.
What I would advise if going for more power is to replace the lower timing chain to duplex to keep the engine reliable. Use only OE Nissan parts from the pre 2005 YD, they are still available from the dealers. Aftermarket sprockets and chains do not worth a penny.
Also regulary clean the MAF.
