Theoreticaly, too much oil ( IE enough to fill into the bottom of the cylinders) can cause damage to your pistons/wrist pins etc as the piston comes down and slaps the dense & incompressible oil. However, an extra quart or so shouldn't bring you any where near that level.
FWIW, I had both a drive through Lube joint and a dealership add extra oil to two different vehicles on two different occasions. This is significant since I have always done 75% of my oil changes on my own. in addition, I've also had these guys over torque /damage the oil filter and drain plug. ( Lucky I guess, i had an uncle who had a dealer forget to tighten the plug and the motor seazed 1/2 way home!) I don't do allot of work on my vehicles any more but now insist on doing 100% of my own oil changes for these very reasons.
